Butterless Butter Chicken

Butterless Butter Chicken
6 chicken breasts
4 tbsp extra virgin olive oil
1 yellow onion
4 tbsp minced garlic
2 tbsp mined ginger
1.5 tbsp curry powder
1 tbsp chili powder
2 tsp paprika
2 tsp garam masala
1/2 tsp Himalayan salt
1/3 cup chicken stock
1 can coconut milk

1. Cut the chicken into cubes and set aside.
2. In a big pan saute onion with the garlic and ginger until fragrant and the onion are translucent.
3. Add the chicken and all the spices and make sure the chicken is well coated with the spices.
4. Cook for 10-15 minutes until the chicken is fully cooked.
5. Add the coconut milk and set on a low simmer for 15 minutes.
